Goodness it’s been a while since my last Currently Loving + Coffee Chat post (since November in fact!), so this one is long overdue! With the craziness of the holidays and then the new year, I somehow missed it for December so there’s definitely a lot to chat about. I’m still coming to terms with it actually being 2018, and now January is almost over? How does this keep happening? It seems like time just keeps flying by! Especially after the craziness of the holidays, it seems like just yesterday I was writing about Thanksgiving. But here we are – it’s finally 2018 and almost February at that! After my much-needed blogging break at the end of the year, I came back re-charged and full of post ideas. And with my 1 year blogiversary right around the corner, I can’t wait to get writing! I’ll still be sticking with my 2 posts/week schedule for now since I still have my hands full with my day job and part-time bartending gig, and after making a few blogging-related purchases (notably In Search of Sheila’s new ebook and the Pinteresting Strategies ebook) I have a lot of behind-the-scenes changes to make. I made some pretty lofty blogging goals this year, and I’m keeping my fingers crossed these ebooks really help!
You miiiiight remember me mentioning it a few times, but my book + wine club and meal planning groups (while still really small) are off to a good start. With only a small handful of members though things get a little boring, especially when everyone else is an introvert like me and doesn’t want to chat! But planning out my meals has definitely made me cook a lot more, which is always a good thing. And I’m reading a lot more too! So I’m making it a point to try and really get the group growing so it’s better for everyone. SO. This month I’ve been pretty good at making it to the gym regularly, and it’s definitely been easier now that my fiance is on a set schedule too. We both starting using a pre-workout powder before we head to the gym in the morning, and me not being a morning person AT ALL can definitely tell a difference! And while I usually only stay at the gym for an hour, with my fiance I end up staying a bit longer. Which is fine with me, but that means I burn more calories than usual, meaning I have to eat a bit more than usual to make up for it. I know I’ve mentioned it before (and more on it later!), but unlike most people I go to the gym to gain weight. So I lay off the cardio and focus on lifting weights. I up my calorie intake for the day (in a healthy way of course!) by sneaking in healthy fats (like avocado, nuts + nut butters, eggs, seeds, olives, etc.) and adding extra protein to my meals.
You know, rather than just pig out on pizza and fries. Though I do that sometimes too! And since my fiance is trying to both lose weight and tone up, he forgoes the additional healthy fats (aka calories). Over the past two months I’ve managed to gain around 3 pounds, which is pretty awesome.
With my fiance currently in Vegas for Shot Show, it’s been pretty quiet at home with both roommates being out and about, but my sister was home most of the day yesterday for her birthday! I ordered takeout for lunch and made cupcakes (which her cat promptly tried to eat), so it was nice having some company in the afternoon for a change. Otherwise I’m usually cleaning and doing work for my day job, but with it being pretty quiet on that front lately I’ve been mostly cleaning. And while my house has never been cleaner, I’m hoping work picks up soon so I don’t end up re-organizing stuff like a crazy person.

And speaking of baking cupcakes….if you tend to bake a lot of muffins/cupcakes/other random things in muffin form, these silicone liners are AMAZING. You get 24 of them for only $10!! WHAT WHAT. Say goodbye to all those wasted paper liners and cooking spray, because these will seriously change your life. I even bought the larger version for mini chicken pot pies (and giant cupcakes and muffins tbh), and they work so well. I don’t need cooking spray for anything, everything beaks more evenly, and I can put them straight on a baking sheet instead of in a muffin tin.
I’m sure you saw them, but just in case here’s a little reminder! Hopefully you saw the new posts so far this month – I reviewed my new Morphe palettes + gave you swatches, shared my 2018 reading list + book releases I have my eyes on, then shared about my roommate horror story. To my surprise, some of you had some pretty crazy roommate stories too, and I’m glad we can all look back on it to learn from that mistake and laugh about how genuinely terrible college living was. And earlier this week I shared a few Valentine’s Day date ideas for all of you who haven’t made plans yet and are looking for some fun-yet-affordable options. I’m hoping to get back on track with my posting schedule in February, so hopefully there will be more than just a few new posts!
And finally, since I rarely buy new clothes it’s a pretty big deal that I actually bought some new clothes! While I was browsing Instagram the other day I ended watching a fellow blogger’s story. And she was wearing THE CUTEST darn sequined sweater. So obviously I had to go and check it out. Turns out it was on sale off Shein for only $25, so I added it to my cart, then saw a “recommended for you” sweater for only $5?!?! and naturally had to add that in there too. Then only needed $10 of stuff to get free shipping, so guess who added a cute cat t-shirt and a basic black/white striped shirt with ruffles sleeves too? This girl. Talk about no self control, especially when it comes to cute af sweaters. Though that might have something to do with this crazy January weather we’ve been dealing with here in Louisiana! My order should arrive in the new few days, so be sure to check my Instagram stories for updates! Then there was a funny “Autocorrect can go straight to he’ll” t-shirt I picked up from GroopDealz for only $10 the week before. I’m always a sucker for silly jokes!
Everything I LOVED In January!
January was a weird month for Louisiana – it snowed, then got back into the 70s and rained a lot, we had a few nice days, then it froze again…and now it’s warm again. Yeah, I’m not sure what’s happening here either. And neither do my sinuses for that matter! I’ve pretty much been in perpetual state of runny noses, sinus headaches, and coughing. Which means I’ve been staying home most of the time and trying not to be a grump. But thankfully I have a HUGE reading list to get through, so I’ve been keeping myself busy reading. Just this month I’ve made it through 5 books, which is pretty crazy (even for me)! So it goes without saying (but here I am saying it anyway!) I have been loving the heck out of my Kindle and Kindle Unlimited subscription! 3 of the 5 books I read were available to read for free, meaning my subscription paid for itself (and then some!) this month. How awesome is that?
Aside from reading like crazy, I’ve been knocking out my daily to-do lists like crazy too! And while it might have something to do with my sheer excitement over using my awesome new notebook, I have a feeling it’s because I feel pretty stinkin’ awesome when I get all my ish done for the day. And lately there’s been a LOT of ish. Between end-of-the-year craziness to get done, tax season to prepare for, a content calendar to set, posts to write, and keeping up with my meal planning and book + wine group, I’ve definitely had a lot of things to cross off my list.

Speaking of meal planning….because I’m planning the dinners for all my meal plan subscribers, I’ve been cooking a lot too! Normally I don’t cook anything crazy during the week since it’s just me, but we’ve been trying to do big lunches instead so I can cook more. And since my mom gave me an Instapot for Christmas (which finally arrived the first week of January), I’ve been trying to use it any time I can. Holy cow is it amazing! I finally understand what all the fuss is about – just yesterday I cooked a 3lb beef roast in it. In only an hour it was done, and was so tender and flavorful you would have sworn I cooked it in the oven all afternoon. I’ve also done a 15 minute baked potato soup, 30 minute spaghetti meat sauce, and rice (which only takes 5 minutes!). I seriously can’t rave about this thing enough! I was a bit apprehensive when I first looked at it – there are so many buttons and functions that it’s a bit overwhelming. Not to mention scary as heck when you have to do a manual pressure release! But thankfully we live in a day and age where Pinterest exists and I can find zillions of easy recipes.
